9.17.25 | As Seen in ... Edible Blue Ridge
From the Fall 2025 issue of Edible Blue Ridge:
I want to talk about a dish my wife made for me on one of our first dates: root vegetables and bratwurst. A simple dish, simply made. After that I never strayed too far from her dining room table again. This dish has become our own family recipe. We make quite often with whatever veggies are available at the time and whatever sausage suits our fancy. In the fall and winter we use sweet potatoes and butternut squash, in the summer we use corn and cherry tomatoes. I love bratwurst in the fall because of all the spices, and I use roasted garlic sausage in the winter. Do whatever makes you happy, because that's what this dish does for me.
Speaking of a hot dish, thank you to Becca for teaching me this recipe, we really cook together.
